Description

A delightful twist on the classic quesadilla, merging Mediterranean flavors with a fun, melty texture.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, red onion, and a sprinkle of black pepper. Mix well to ensure everything is evenly distributed.
  2. Lay one tortilla flat on a clean surface. Place one-fourth of the filling mixture on one half of the tortilla, then fold it over to cover the filling.
  3. Heat a non-stick skillet over medium heat and add the olive oil.
  4. Carefully place the filled tortilla in the skillet and cook for about 3-4 minutes, until the bottom is golden brown.
  5. Flip the quesadilla with care and cook for another 3-4 minutes until both sides are crispy.
  6. Remove from heat, slice into wedges, and serve warm.

Notes

Serve with a fresh Greek salad or tzatziki sauce for dipping.
