Description

A delightful, creamy soup featuring tender chicken, colorful vegetables, and a luscious broth for a comforting meal.


Ingredients

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • Fresh spinach
  • Grated Parmesan cheese for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
  2. Toss in the diced carrots, celery, and zucchini. Cook for about 5 minutes until softened.
  3. Add the chicken breasts and pour in the chicken broth. Bring to a boil, then reduce the heat and simmer until the chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the soup.
  5. Stir in the heavy cream and Italian seasoning. Season with salt and pepper to taste.
  6. Add the fresh spinach and let it wilt in the soup.
  7. Serve hot, garnished with grated Parmesan cheese on top.

Notes
