- 3 boneless skinless chicken thighs
- 3/4 tbsp smoked sweet paprika
- 1 tbsp Italian seasoning
- 3/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp sun dried tomato oil
- 12 oz farfalle pasta
- 2 tbsp butter
- 2 tbsp dried shallots
- 2 tbsp minced garlic
- 1 tbsp minced onion
- 3 tbsp Bob’s Red Mill 1:1 gluten free flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded parmesan
- 1/4 cup diced sun dried tomatoes
- 2 tbsp tomato paste
- 1 cup diced spinach
- 1 tbsp Italian seasoning
- 1/2 tsp smoked sweet paprika
- 1/2 tsp salt
- Chopped fresh basil
Instructions
- Cook the Pasta: Boil a large pot of salted water and cook the farfalle pasta according to package directions until al dente. Drain and set aside.
- Season the Chicken: On a plate, combine smoked sweet paprika, Italian seasoning, salt, and pepper. Coat the chicken thighs in the spice mixture.
- Sauté the Chicken: In a large skillet over medium heat, add the sun dried tomato oil and one tablespoon of butter. Once hot, sear the chicken thighs for about 5-7 minutes per side until golden brown and cooked through. Remove and set aside.
- Make the Sauce: In the same skillet, add the remaining butter, dried shallots, garlic, and onion. Sauté until fragrant, about 2-3 minutes.
- Thicken the Sauce: Sprinkle the gluten-free flour over the sautéed ingredients, stirring to combine. Gradually add in the chicken broth, whisking until smooth, followed by the heavy cream, parmesan, sun dried tomatoes, and spinach. Stir to combine and bring to a simmer.
- Combine Everything: Slice the cooked chicken and return it to the skillet. Add the cooked farfalle and toss to coat.
- Season to Taste: Stir in additional Italian seasoning, smoked paprika, and salt as necessary.
- Serve: Spoon the pasta into bowls and garnish with fresh basil before serving.
