Ingredients

  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 4 cloves garlic, minced
  • 1 cup spinach
  • Salt and pepper to taste
  • Parmesan cheese for garnish

Instructions

  1. Season the chicken breasts generously with salt and pepper.
  2. In a skillet, heat a splash of olive oil over medium heat. Cook the chicken until it’s golden brown on both sides, about 5-7 minutes per side.
  3. Once browned, remove the chicken from the skillet and set aside on a plate.
  4. Using the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  5. Pour in the heavy cream, chicken broth, sun-dried tomatoes, and Italian seasoning; stir well to combine all ingredients.
  6. Return the chicken to the skillet and let it simmer in the sauce for 15-20 minutes until fully cooked through.
  7. Add the spinach, stirring until it wilts.
  8. Serve warm over pasta or rice, garnished with freshly grated Parmesan cheese.
