Description

A delightful and creamy chicken dish that’s perfect for romantic dinners or busy weeknights, featuring succulent chicken breasts in a savory sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large skillet, warm the olive oil over medium heat.
  2. Season the chicken breasts with salt and pepper. Add them to the skillet and cook until golden brown on both sides, about 6-7 minutes per side. Remove the chicken and set it aside.
  3. In the same skillet, add minced garlic and stir for about 1 minute until fragrant.
  4. Pour in the diced tomatoes and heavy cream, and stir in the Italian seasoning. Mix until well combined.
  5. Return the chicken to the skillet, ensuring it is covered with the sauce. Let it simmer for 10-15 minutes until fully cooked.
  6. Finish with fresh basil before serving.

Notes

For a lighter version, swap heavy cream with coconut cream. Chicken thighs can also be used for a richer flavor.
