- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large skillet, warm the olive oil over medium heat.
- Season the chicken breasts with salt and pepper. Add them to the skillet and cook until golden brown on both sides, about 6-7 minutes per side. Remove the chicken and set it aside.
- In the same skillet, add minced garlic and stir for about 1 minute until fragrant.
- Pour in the diced tomatoes and heavy cream, and stir in the Italian seasoning. Mix until well combined.
- Return the chicken to the skillet, ensuring it is covered with the sauce. Let it simmer for 10-15 minutes until fully cooked.
- Finish with fresh basil before serving.
Notes
For a lighter version, swap heavy cream with coconut cream. Chicken thighs can also be used for a richer flavor.
