Instructions
- Heat olive oil in a skillet over medium heat.
- Add ground chicken, cooking until browned and cooked through.
- Stir in taco seasoning, following package instructions for the best results.
- In a separate pan, sauté cauliflower rice over medium heat until tender.
- To assemble, layer your bowl starting with cauliflower rice.
- Follow with ground chicken, diced tomatoes, optional corn, and black beans.
- Top off with avocado slices, shredded cheese, and fresh cilantro.
- Serve with a wedge of lime for that extra zing.
