Instructions
- Start by placing the cottage cheese, cooled coffee, honey (or maple syrup), vanilla extract, and a pinch of salt into a blender or food processor. Blend until the mixture reaches a smooth, creamy consistency.
- Next, pour the blend into an airtight container and freeze it for about 60-120 minutes to begin the chilling process.
- Once the initial freezing is done, take the mixture out and give it a good stir to ensure it stays creamy, then return it to the freezer for an additional 120-180 minutes or until firm.
- When you’re ready to serve, let the ice cream sit at room temperature for a few minutes to soften slightly.
- Finally, scoop into bowls and add your favorite toppings, like chocolate chips or nuts, if desired.
