Ingredients

  • 1 lb ground beef or turkey
  • 1 cup shredded cheese
  • 1 cup black beans, rinsed
  • 1 cup corn
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup lettuce, shredded
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cube the potatoes, then toss them in a bowl with olive oil, paprika, garlic powder, salt, and pepper until well coated.
  3. Arrange the potatoes on a baking sheet and roast for about 25-30 minutes, or until they’re crispy and golden brown.
