Description

A comforting and creamy Loaded Potato Soup that warms the soul with savory potatoes, cheese, and bacon.


Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 medium onion, diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, sauté the diced onion over medium heat until translucent.
  2. Add the diced potatoes and broth, then bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.
  3. Reduce heat and add the heavy cream, cheese, and half of the crumbled bacon. Stir until the cheese is melted.
  4. Season your soup with salt and pepper according to taste.
  5. Serve hot, garnished with the remaining bacon and chopped green onions.

Notes

For a creamier texture, use Yukon Gold potatoes. You can customize the soup with additional toppings like cheese or sour cream.
