- 4 large potatoes, peeled and diced
- 1 medium onion, diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup cooked bacon, crumbled
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, sauté the diced onion over medium heat until translucent.
- Add the diced potatoes and broth, then bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.
- Reduce heat and add the heavy cream, cheese, and half of the crumbled bacon. Stir until the cheese is melted.
- Season your soup with salt and pepper according to taste.
- Serve hot, garnished with the remaining bacon and chopped green onions.
Notes
For a creamier texture, use Yukon Gold potatoes. You can customize the soup with additional toppings like cheese or sour cream.
