- 4 large potatoes, peeled and diced
- 1 onion, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup cheddar cheese, shredded
- 6 slices bacon, cooked and crumbled
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large pot, cook bacon until crispy. Remove and set aside, leaving the drippings.
- Add diced onion to the pot and sauté until translucent.
- Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Mash some of the potatoes in the pot for a thicker consistency.
- Stir in heavy cream, cheddar cheese, and crumbled bacon.
- Season with salt and pepper to taste.
- Serve hot, garnished with green onions.
Notes
For a vegetarian version, use vegetable broth instead of chicken broth and omit the bacon.
