Description

A creamy and savory soup made from fresh potatoes, smoky bacon, and rich cheddar cheese, perfect for chilly evenings.


Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 onion, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 6 slices bacon, cooked and crumbled
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a large pot, cook bacon until crispy. Remove and set aside, leaving the drippings.
  2. Add diced onion to the pot and sauté until translucent.
  3. Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Mash some of the potatoes in the pot for a thicker consistency.
  5. Stir in heavy cream, cheddar cheese, and crumbled bacon.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with green onions.

Notes

For a vegetarian version, use vegetable broth instead of chicken broth and omit the bacon.
