Description

A heartwarming and creamy soup that combines the flavors of baked potatoes and fresh vegetables, perfect for chilly evenings.

Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 cup chopped onions
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Optional toppings: green onions, bacon bits, sour cream

Instructions

  1. In a large pot, combine the diced potatoes, chopped onions, carrots, celery, and vegetable broth.
  2. Bring to a boil and then reduce to a simmer for about 15-20 minutes, or until the potatoes are tender.
  3. Use an immersion blender to puree the soup until smooth, or mash the potatoes with a potato masher for a chunkier texture.
  4. Stir in the heavy cream and shredded cheese until melted and well combined.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with optional toppings as desired.

Notes

For added nutrition, consider adding spinach or kale. Experiment with different cheeses for varied flavors.
