Ingredients

  • 34 medium zucchini, spiralized
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 lemon (zest and juice)
  • 1 tbsp butter (optional)
  • ¼ tsp red pepper flakes
  • Salt and black pepper, to taste
  • ¼ cup grated Parmesan (optional)
  • 2 tbsp chopped parsley

Instructions

  1. Trim ends and spiralize zucchini. Spread on paper towels, sprinkle with salt, and let rest 10 minutes. Pat dry.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 30 seconds until fragrant.
  3. Add lemon zest, red pepper flakes, and a pinch of salt. Stir to combine.
  4. Add zucchini noodles and toss with tongs to coat. Cook for 1–2 minutes, just until tender.
  5. Remove from heat, stir in lemon juice and butter (if using). Toss to coat.
  6. Top with chopped parsley, cracked pepper, and Parmesan if desired. Serve immediately.

Notes

Spiralize zucchini just before cooking for best texture. Salt and drain to reduce moisture. For a creamy twist, add a spoonful of Greek yogurt or cream cheese. Pair with grilled chicken, shrimp, or roasted veggies.
