  • Juice of 0.5 lemon
  • 45 mL soy sauce
  • Steamed rice (to serve)

Instructions

  1. Start by sprinkling the sliced chicken breasts with kosher salt and freshly ground black pepper, ensuring even coverage.
  2. Heat olive oil in a large pan over medium-high heat.
  3. Add the seasoned chicken to the pan, stir-frying until the surface is no longer pink, roughly 4 minutes.
  4. Incorporate minced garlic into the pan, continuing to stir-fry until the chicken is fully cooked, which should take about 4 more minutes.
  5. Next, add the asparagus, lemon zest, and lemon juice to the pan. Toss everything to combine and cook until the asparagus is just tender, around 2 minutes.
  6. Pour in the soy sauce, stirring well to coat all ingredients evenly.
  7. Finally, serve the chicken and asparagus stir-fry over steamed rice. Garnish with additional lemon zest to taste.

Notes

For extra flavor, consider adding sesame seeds or crushed chili flakes. This dish is versatile; feel free to swap chicken for tofu or add in other vegetables.
