Description

A comforting and hearty soup made with savory sausage, tender potatoes, and a creamy broth, perfect for chilly evenings.


Ingredients

Scale
  • 1 pound sausage (Italian or breakfast)
  • 4 large potatoes, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot, cook the sausage over medium heat until browned.
  2. Add the onion, carrots, and garlic, and sauté until softened.
  3. Stir in the diced potatoes and chicken broth, and bring to a boil.
  4. Reduce heat and let simmer until potatoes are tender, about 15-20 minutes.
  5. Stir in the heavy cream and season with salt and pepper.
  6. Simmer for another 5 minutes, then serve hot, garnished with chopped parsley.

Notes

For a thicker soup, blend a cup of the soup and stir it back in. Optionally add red pepper flakes for spice or various vegetables for additional flavor.
