- 1 pound sausage (Italian or breakfast)
- 4 large potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cloves garlic, minced
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, cook the sausage over medium heat until browned.
- Add the onion, carrots, and garlic, and sauté until softened.
- Stir in the diced potatoes and chicken broth, and bring to a boil.
- Reduce heat and let simmer until potatoes are tender, about 15-20 minutes.
- Stir in the heavy cream and season with salt and pepper.
- Simmer for another 5 minutes, then serve hot, garnished with chopped parsley.
Notes
For a thicker soup, blend a cup of the soup and stir it back in. Optionally add red pepper flakes for spice or various vegetables for additional flavor.
