- 1 pound sausage (any variety you prefer)
- 4 large potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon thyme
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot over medium heat, cook the sausage until it’s browned and crumbly.
- Add the chopped onions and minced garlic. Cook until the onions are soft and translucent.
- Toss in the diced potatoes and pour in the chicken broth. Bring to a boil, then lower the heat and let it simmer for 15-20 minutes until the potatoes are tender.
- Stir in the heavy cream and thyme, seasoning with salt and pepper to taste.
- Allow everything to cook together for an additional 5 minutes.
- Serve hot, garnished with fresh parsley.
