Description

A rich, hearty sausage potato soup that’s perfect for chilly days, combining savory sausage, tender potatoes, and a creamy broth.


Ingredients

  • 1 pound sausage (any variety you prefer)
  • 4 large potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot over medium heat, cook the sausage until it’s browned and crumbly.
  2. Add the chopped onions and minced garlic. Cook until the onions are soft and translucent.
  3. Toss in the diced potatoes and pour in the chicken broth. Bring to a boil, then lower the heat and let it simmer for 15-20 minutes until the potatoes are tender.
  4. Stir in the heavy cream and thyme, seasoning with salt and pepper to taste.
