Ingredients

- 1 cup small pasta (like acini di pepe or orzo)
- 1 pound ground beef or turkey
- 1/2 pound ground pork
- 1/2 cup grated parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 1/2 cup breadcrumbs
- 4 cups chicken broth
- 2 cups chopped kale or spinach
- 1 cup diced carrots
- 1 cup diced celery
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). In a mixing bowl, combine ground meats, parmesan cheese, parsley, egg, breadcrumbs, garlic powder, onion powder, salt, and pepper. Form mixture into small meatballs and place on a baking sheet. Bake for 20 minutes or until golden and cooked through.
- In a large pot, bring 4 cups of chicken broth to a boil. Add diced carrots and celery, allowing to simmer for 10 minutes.
- Once veggies are tender, add cooked meatballs, pasta, and chopped kale (or spinach) to the pot. Cook until pasta is tender, about 10-12 minutes.
- Serve your soup hot, garnished with additional parmesan cheese and fresh parsley if desired.
Notes
For added flavor, use homemade chicken broth and feel free to substitute greens or pasta based on your preference.
