Ingredients

- 2 cans of tuna, drained
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1/2 cup chopped red onion
- 1/2 cup chopped celery
- 1/2 cup cherry tomatoes, halved
- 1/4 cup black olives, sliced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a large bowl, combine the drained tuna, red onion, celery, cherry tomatoes, black olives, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
- Pour the dressing over the tuna mixture and toss gently to combine.
- Adjust seasoning to taste.
- Serve chilled or at room temperature with crusty bread.
Notes
Allow the salad to marinate for at least 30 minutes in the fridge for best flavor. Store leftovers in an airtight container for up to three days.
