- 1 lb boneless, skinless chicken breasts
- 1 can white beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 4 cups chicken broth
- Salt and pepper to taste
- Toppings: sour cream, cilantro, avocado, lime (optional)
Instructions
- Set your Instant Pot to sauté mode. Add the diced onion and minced garlic, cooking until they’re softened and fragrant.
- Stir in the chicken breasts, white beans, corn, cumin, chili powder, and chicken broth.
- Season with salt and pepper to taste.
- Close the lid and select high pressure for 15 minutes.
- Once done, quickly release the pressure and shred the chicken using two forks.
- Stir everything together and adjust seasonings if needed.
- Dish it up hot, topping with sour cream, cilantro, avocado, and lime if desired.
Notes
For a spicy kick, add jalapeños or a few dashes of hot sauce. Keep chicken fully submerged in broth for moisture.
