Description

A comforting and quick dish that combines tender chicken, creamy white beans, and zesty seasonings, perfect for chilly evenings and busy weeknights.


Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Toppings: sour cream, cilantro, avocado, lime (optional)

Instructions

  1. Set your Instant Pot to sauté mode. Add the diced onion and minced garlic, cooking until they’re softened and fragrant.
  2. Stir in the chicken breasts, white beans, corn, cumin, chili powder, and chicken broth.
  3. Season with salt and pepper to taste.
  4. Close the lid and select high pressure for 15 minutes.
  5. Once done, quickly release the pressure and shred the chicken using two forks.
  6. Stir everything together and adjust seasonings if needed.
  7. Dish it up hot, topping with sour cream, cilantro, avocado, and lime if desired.

Notes

For a spicy kick, add jalapeños or a few dashes of hot sauce. Keep chicken fully submerged in broth for moisture.
