A comforting and delectable Instant Pot White Chicken Chili, perfect for busy weeknights.
Ingredients

- 1 lb chicken breast
- 1 can white beans (such as cannellini)
- 1 can corn
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 4 cups chicken broth
- Salt and pepper to taste
Instructions
- Set your Instant Pot to ‘sauté’ mode. Add the chopped onion and minced garlic, cooking until fragrant and soft.
- Add the chicken breast, white beans, corn, cumin, chili powder, chicken broth, and a sprinkle of salt and pepper to the pot.
- Close the lid securely and set the Instant Pot to ‘high pressure’ for 15 minutes.
- After the cooking time is complete, let the pressure release naturally for 5 minutes, then perform a quick release.
- Carefully remove the lid and shred the chicken in the pot. Stir everything to combine the flavors.
- Serve hot, garnished with toppings of your choice.
Notes
Allow leftovers to cool completely before storing in airtight containers. Can be frozen for up to three months.
