Description

A comforting and delectable Instant Pot White Chicken Chili, perfect for busy weeknights.


Ingredients

Scale
  • 1 lb chicken breast
  • 1 can white beans (such as cannellini)
  • 1 can corn
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Set your Instant Pot to ‘sauté’ mode. Add the chopped onion and minced garlic, cooking until fragrant and soft.
  2. Add the chicken breast, white beans, corn, cumin, chili powder, chicken broth, and a sprinkle of salt and pepper to the pot.
  3. Close the lid securely and set the Instant Pot to ‘high pressure’ for 15 minutes.
  4. After the cooking time is complete, let the pressure release naturally for 5 minutes, then perform a quick release.
  5. Carefully remove the lid and shred the chicken in the pot. Stir everything to combine the flavors.
  6. Serve hot, garnished with toppings of your choice.

Notes

Allow leftovers to cool completely before storing in airtight containers. Can be frozen for up to three months.
