Description

A warm bowl of creamy white chicken chili made in an Instant Pot, combining tender chicken, hearty beans, and savory spices for a comforting meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup chicken broth
  • 1 can (4 oz) diced green chilies
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup heavy cream
  • Toppings: sour cream, cheese, avocado, cilantro

Instructions

  1. Place the chicken, white beans, chicken broth, green chilies, diced onion, minced garlic, cumin, oregano, salt, and pepper in the Instant Pot.
  2. Secure the lid and set to high pressure for 10 minutes.
  3. Once done, perform a quick-release of the pressure. Shred the chicken using two forks and stir it back into the chili.
  4. Pour in the heavy cream, and mix well. Taste and adjust the seasoning if needed.
  5. Serve hot, garnished with your favorite toppings.

Notes

For a lighter option, substitute heavy cream with half-and-half or a dairy-free alternative.
