Description

A creamy and flavorful Cajun Potato Soup made effortlessly in the Instant Pot, perfect for any time of year.


Ingredients

  • 4 cups diced potatoes
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sliced green onions
  • Crispy bacon bits

Instructions

  1. Turn on the Instant Pot and set it to Sauté mode. Add olive oil and heat.
  2. Add chopped onion and cook for 2-3 minutes until softened.
  3. Add minced garlic and cook for an additional 30 seconds.
  4. Stir in Cajun seasoning, paprika, and cayenne pepper, mixing well.
  5. Add diced potatoes and stir to coat in the spices.
  6. Pour chicken broth into the pot and stir to combine.
  7. Close the lid and set the valve to Sealing. Cook on Manual or Pressure Cook for 10 minutes.
  8. After cooking, allow pressure to release naturally for 5 minutes, then switch the valve to Venting to release remaining pressure.
  9. Stir in heavy cream until smooth, followed by shredded cheddar cheese until melted.
  10. Season with salt and pepper to taste and mix in sliced green onions and bacon bits.

Notes

For extra creaminess, add more heavy cream or a splash of milk. You can customize the soup with other vegetables or proteins.
