- 4 cups diced potatoes
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup sliced green onions
- Crispy bacon bits
Instructions
- Turn on the Instant Pot and set it to Sauté mode. Add olive oil and heat.
- Add chopped onion and cook for 2-3 minutes until softened.
- Add minced garlic and cook for an additional 30 seconds.
- Stir in Cajun seasoning, paprika, and cayenne pepper, mixing well.
- Add diced potatoes and stir to coat in the spices.
- Pour chicken broth into the pot and stir to combine.
- Close the lid and set the valve to Sealing. Cook on Manual or Pressure Cook for 10 minutes.
- After cooking, allow pressure to release naturally for 5 minutes, then switch the valve to Venting to release remaining pressure.
- Stir in heavy cream until smooth, followed by shredded cheddar cheese until melted.
- Season with salt and pepper to taste and mix in sliced green onions and bacon bits.
Notes
For extra creaminess, add more heavy cream or a splash of milk. You can customize the soup with other vegetables or proteins.
