- 2 limes (juiced)

- 1/2 tsp cumin

- 1 cup rice (uncooked)
- 1 avocado (diced)
- 1/2 cup cilantro (chopped)
- 1/4 cup sour cream
Instructions
- Whisk together honey, lime juice, chili powder, cumin, salt, and pepper. Coat the chicken breasts thoroughly with the marinade and let them sit for at least 30 minutes.
- Cook 1 cup of rice according to package directions. Set aside to cool.
- Heat your grill or skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side until browned and no longer pink inside. Let it rest before slicing.
- Combine the cooked rice, diced avocado, chopped cilantro, and sour cream in a large bowl. Gently fold everything together until well mixed and creamy.
- Spoon a generous scoop of the creamy avocado rice on serving plates. Top with sliced honey lime chicken, and finish with an extra drizzle of lime juice.
Notes
