- 1 lb bone-in, skin-on chicken (or boneless cuts/rotisserie)
- 1 cup diced onion
- 1 cup diced carrots
- 1 cup diced celery
- 3 cloves minced garlic
- 8 cups chicken broth
- 1 cup egg noodles (or whole grain/gluten-free)
- 1 tsp fresh thyme (or dried)
- 2 bay leaves
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, heat a little oil over medium heat. Add diced onions, carrots, and celery. Sauté until softened.
- Stir in minced garlic and cook for another minute until fragrant.
- Place chicken in the pot, followed by the broth. Season with thyme, bay leaves, salt, and pepper.
- Bring to a boil, then lower the heat and let it simmer for about 30 minutes.
- Remove chicken, shred it, and return it to the pot.
- Add noodles and cook according to package instructions until tender.
- Taste and adjust seasoning as needed before serving.
Notes
For a twist, try adding crushed red pepper flakes for heat or substitute chickpeas for a vegetarian option.
