Description

A comforting chicken noodle soup that brings warmth and flavor to your home, perfect for chilly days and when you’re feeling under the weather.


Ingredients

  • 1 lb bone-in, skin-on chicken (or boneless cuts/rotisserie)
  • 1 cup diced onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cloves minced garlic
  • 8 cups chicken broth
  • 1 cup egg noodles (or whole grain/gluten-free)
  • 1 tsp fresh thyme (or dried)
  • 2 bay leaves
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat a little oil over medium heat. Add diced onions, carrots, and celery. Sauté until softened.
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Place chicken in the pot, followed by the broth. Season with thyme, bay leaves, salt, and pepper.
  4. Bring to a boil, then lower the heat and let it simmer for about 30 minutes.
  5. Remove chicken, shred it, and return it to the pot.
  6. Add noodles and cook according to package instructions until tender.
  7. Taste and adjust seasoning as needed before serving.

Notes

For a twist, try adding crushed red pepper flakes for heat or substitute chickpeas for a vegetarian option.
