- 4 cups chicken broth
- 2 boneless, skinless chicken breasts
- 2 packages ramen noodles
- 2 green onions, sliced
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 cup mushrooms, sliced
- 1 cup spinach or bok choy
- Salt and pepper to taste
- Soft-boiled eggs (optional)
Instructions
- In a large pot, heat the sesame oil over medium heat. Add the minced garlic and sliced mushrooms, sautéing until they are soft.
- Pour in the chicken broth and bring it to a gentle simmer.
- Add the chicken breasts, soy sauce, salt, and pepper. Cook the chicken until it’s fully cooked, about 15-20 minutes. Once done, remove the chicken, shred it, and set it aside.
- Next, introduce the ramen noodles to the simmering broth. Cook according to the package instructions, typically around 3-4 minutes.
- Stir in the green onions and spinach (or bok choy), cooking until the greens are tender.
- Serve your ramen in bowls, topping with the shredded chicken and soft-boiled eggs, if desired. Enjoy every slurp!
Notes
Feel free to experiment with different types of mushrooms for added flavor. For a quicker meal, pre-cook and freeze chicken.
