Description

A soul-soothing dish that combines tender chicken, savory broth, and nourishing greens into a comforting bowl of ramen.


Ingredients

  • 4 cups chicken broth
  • 2 boneless, skinless chicken breasts
  • 2 packages ramen noodles
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 cup mushrooms, sliced
  • 1 cup spinach or bok choy
  • Salt and pepper to taste
  • Soft-boiled eggs (optional)

Instructions

  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and sliced mushrooms, sautéing until they are soft.
  2. Pour in the chicken broth and bring it to a gentle simmer.
  3. Add the chicken breasts, soy sauce, salt, and pepper. Cook the chicken until it’s fully cooked, about 15-20 minutes. Once done, remove the chicken, shred it, and set it aside.
  4. Next, introduce the ramen noodles to the simmering broth. Cook according to the package instructions, typically around 3-4 minutes.
  5. Stir in the green onions and spinach (or bok choy), cooking until the greens are tender.
  6. Serve your ramen in bowls, topping with the shredded chicken and soft-boiled eggs, if desired. Enjoy every slurp!

Notes

Feel free to experiment with different types of mushrooms for added flavor. For a quicker meal, pre-cook and freeze chicken.
