- 1 cup cottage cheese
- 1 pound turkey sausage, cooked and crumbled
- 6 eggs
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup chopped spinach
- Salt and pepper to taste
- Olive oil for greasing the dish
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with olive oil.
- In a large bowl, whisk the eggs and cottage cheese together until mostly smooth.
- Add the cooked turkey sausage, diced bell peppers, diced onions, chopped spinach, and half of the shredded cheese. Season with salt and pepper and stir until evenly mixed.
- Pour the mixture into the prepared baking dish and smooth the top with a spatula.
- Sprinkle the remaining shredded cheese evenly over the casserole.
- Bake for 25–30 minutes, or until the center is set and the top is lightly golden. Let rest for 5–10 minutes before slicing.
Notes
This casserole keeps well in the fridge for up to 3–4 days and reheats wonderfully. Let it rest before slicing for neat servings.
