Description

A fluffy loaf that tastes just like your favorite cinnamon rolls but is packed with protein, making it perfect for breakfast or a snack.


Ingredients

Scale
  • 1 cup cottage cheese
  • 1 cup oats
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 tablespoon cinnamon
  • 1/2 teaspoon salt
  • Optional: chopped nuts or raisins

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, combine the cottage cheese, oats, eggs, honey (or maple syrup), vanilla extract, baking powder, cinnamon, and salt. Mix until well combined.
  3. If desired, fold in chopped nuts or raisins.
  4. Pour the mixture into the prepared loaf pan.
  5. Bake for 45-50 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  6. Allow to cool before slicing and serving.

Notes

Store in an airtight container; lasts at room temperature for a few days or in the refrigerator for up to a week. Can be frozen for longer storage.
