Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix the cottage cheese, eggs, honey, milk, and vanilla extract until everything is well combined.
  3. In another bowl, whisk together the whole wheat flour, baking powder, and salt.
  4. Gradually blend the dry ingredients into the wet mixture, stirring gently until just combined.
  5. Carefully fold in the blueberries, ensuring not to overmix.
  6. Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the muffins to cool for a few minutes before transferring them to a wire rack.

Notes

For a dairy-free version, replace cottage cheese with a vegan alternative and use almond or oat milk.
