  • 1 tablespoon honey or maple syrup (optional)
  • 1 tablespoon baking powder

  • 1/2 cup milk (any type)
  • 2 tablespoons milk or melted butter (for brushing)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, salt, and pepper.
  3. Cut in the softened butter until the mixture resembles coarse crumbs.
  4. Stir in the cottage cheese and honey/maple syrup until combined.
  5. Pour in the milk and fold gently until a shaggy dough forms.
  6. Turn the dough onto a floured surface and pat to about 1-inch thickness.
  7. Cut into rounds and place 1 inch apart on the prepared sheet.
  8. Brush tops with milk or melted butter.
  9. Bake for 12–15 minutes until risen and golden brown.
