Description

An easy and delicious high-protein quesadilla made with shredded chicken, Greek yogurt, and zesty ranch seasoning, perfect for busy weeknight dinners.


Ingredients

  • 1 low-carb tortilla
  • 1/4 cup Greek yogurt
  • 2 Laughing Cow cheese wedges
  • 1 cup cooked chicken, shredded
  • 1 tablespoon ranch seasoning
  • Cooking spray or oil for frying

Instructions

  1. In a medium mixing bowl, combine the Greek yogurt, shredded chicken, and ranch seasoning until well incorporated.
  2. On one half of the low-carb tortilla, spread one of the Laughing Cow cheese wedges.
  3. Spoon the chicken mixture on top of the cheese, then gently fold the tortilla in half.
  4. Preheat a non-stick skillet over medium heat and lightly coat it with cooking spray or oil.
  5. Carefully place the quesadilla in the skillet and cook for 3-4 minutes on each side until golden brown and crispy.
  6. Remove from skillet, slice into wedges, and serve warm.

Notes

For added flavor, serve with fresh salsa, guacamole, or your favorite dipping sauce.
