- 1 low-carb tortilla
- 1/4 cup Greek yogurt
- 2 Laughing Cow cheese wedges
- 1 cup cooked chicken, shredded
- 1 tablespoon ranch seasoning
- Cooking spray or oil for frying
Instructions
- In a medium mixing bowl, combine the Greek yogurt, shredded chicken, and ranch seasoning until well incorporated.
- On one half of the low-carb tortilla, spread one of the Laughing Cow cheese wedges.
- Spoon the chicken mixture on top of the cheese, then gently fold the tortilla in half.
- Preheat a non-stick skillet over medium heat and lightly coat it with cooking spray or oil.
- Carefully place the quesadilla in the skillet and cook for 3-4 minutes on each side until golden brown and crispy.
- Remove from skillet, slice into wedges, and serve warm.
Notes
For added flavor, serve with fresh salsa, guacamole, or your favorite dipping sauce.
