Ingredients

  • 5 oz cottage cheese
  • 1/2 cup oat flour

  • 1 banana, mashed
  • 1/4 cup almond milk
  • 1/2 cup blueberries
  • Sugar (optional)

Instructions

  1. Combine the egg, cottage cheese, oat flour, vanilla extract, baking powder, mashed banana, and almond milk in a mixing bowl. Mix until well combined.
  2. Fold in the blueberries gently for that burst of flavor in every bite.
  3. Heat a non-stick skillet over medium heat and lightly grease it if needed to prevent sticking.
  4. Pour small amounts of batter onto the skillet to form mini pancakes.
