Ingredients

  • 1 lb ground beef or turkey
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup beef or chicken broth

Instructions

  1. Brown the ground meat in a skillet over medium heat until fully cooked. Drain any excess fat.
  2. Transfer the cooked meat into a large crockpot and add the kidney beans, black beans, diced tomatoes, tomato paste, onion, bell pepper, minced garlic, chili powder, cumin, and broth.
  3. Mix all ingredients well and season with salt and pepper to taste.
  4. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until flavors blend beautifully.
  5. Serve hot, garnished with optional toppings like cheese, sour cream, or sliced green onions.

Notes

For extra flavor, consider sautéing the onion and bell pepper with the meat. Chili can be thickened by reducing broth or adding more tomato paste.
