Description

Hearty and delicious Beef Skillet Enchiladas, packed with seasoned ground beef, fresh vegetables, and gooey cheese, all in cozy corn tortillas.


Ingredients

  • ½ teaspoon olive oil
  • 1 lb lean ground beef
  • 1 small red bell pepper, diced (about ¾1 cup)
  • 1 medium zucchini, diced (about 2 cups)
  • 6 green onions, thinly sliced (white/light green and dark green parts separated)
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 2 cups red enchilada sauce (jarred or canned)
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup frozen corn (fire-roasted or regular)
  • 8 (6-inch) corn tortillas, each cut into 6 wedges (about 8 ounces total)
  • 1 ½ cups shredded Mexican blend cheese, divided
  • For garnish: green onion tops, fresh cilantro, sour cream, diced tomatoes, diced or sliced avocado

Instructions

  1. Preheat your oven to 425℉.
  2. Warm a large oven-safe skillet over medium-high heat. Once hot, spray with cooking spray and add olive oil, swirling to coat.
  3. Add lean ground beef, red bell pepper, diced zucchini, and the white/light green parts of the green onions.
  4. Break up the beef with a spatula, cooking for about 8 minutes or until the meat is no longer pink and the zucchini has softened.
  5. Turn off the heat and stir in chili powder, garlic powder, oregano, enchilada sauce, black beans, corn, and ½ cup of shredded cheese until well combined.
  6. Carefully fold in the corn tortilla wedges to ensure they’re soaked with sauce and evenly mixed.
  7. Top the mixture with the remaining 1 cup of shredded cheese, and bake for 10-15 minutes or until the cheese is melted and bubbly.
  8. Once removed from the oven, garnish with the dark green parts of the green onions, cilantro, diced tomatoes, and avocado. Serve with dollops of sour cream, if desired.

Notes

You can swap in your favorite veggies or cheese blends to make the dish your own. For a healthier option, use leaner ground beef or substitute with ground turkey.
