- 1 lb chicken breast, cubed
- 2 cups cooked rice
- 1 cup pineapple chunks
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat the olive oil in a large pan over medium heat.
- Add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant, about 3-4 minutes.
- Incorporate the cubed chicken into the pan. Season with salt and pepper, and cook until the chicken is browned and fully cooked through, around 5-7 minutes.
- Add the diced bell pepper. Stir and cook for another 2-3 minutes until softened.
- Mix in the cooked rice, pineapple chunks, and soy sauce. Stir everything well to ensure an even distribution of flavors.
- Allow the dish to cook for an additional 5 minutes until all ingredients are heated through.
- Serve it hot, garnished with chopped green onions.
