Description

Fluffy, high-protein pancakes made with oats and cottage cheese, perfect for a nutritious breakfast.


Ingredients

Scale
  • 3/4 cup old-fashioned oats
  • 3/4 cup cottage cheese
  • 3 large eggs
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 3 tablespoons honey

Instructions

  1. Gather your ingredients.
  2. Add all the ingredients to a high-speed blender and blend until smooth.
  3. Heat a large nonstick skillet over medium heat and spray with cooking spray.
  4. Pour the batter into the pan, spacing pancakes evenly.
  5. Cook for 2 to 3 minutes until edges are set and bottom is golden-brown.
  6. Flip each pancake and cook for another 1 to 2 minutes until golden-brown.
  7. Transfer the cooked pancakes to a plate and repeat with the remaining batter.
  8. Serve warm with your favorite toppings.

Notes

Blend well for best texture. Add milk if the batter is too thick.
