Ingredients

- 1 Chicken Breast
- 1/2 cup Greek Yogurt
- 1/2 Cucumber, grated
- 2 cloves Garlic, minced
- 2 tbsp Lemon Juice
- 2 tbsp Dill, chopped
- 2 tbsp Olive Oil
- Salt, to taste
- Pepper, to taste
- 4 cups Mixed Greens or Lettuce
- 1 cup Tomatoes, chopped
- 1/2 Red Onion, sliced
Instructions
- Cook the chicken breast until done, allow to cool.
- In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, olive oil, salt, and pepper; mix until smooth.
- Chop the cooled chicken into cubes. In a large bowl, add mixed greens, chopped tomatoes, and sliced red onion.
- Toss in the chopped chicken and drizzle the tzatziki sauce over the salad, mixing gently to coat.
- Serve chilled or at room temperature.
Notes
For a vegetarian option, substitute chicken with grilled tofu or chickpeas. Let the tzatziki sauce sit in the fridge for at least 30 minutes for better flavor.
