Description

A refreshing and vibrant salad featuring chicken and a creamy tzatziki sauce, perfect for warm days.


Ingredients

  • 1 Chicken Breast
  • 1/2 cup Greek Yogurt
  • 1/2 Cucumber, grated
  • 2 cloves Garlic, minced
  • 2 tbsp Lemon Juice
  • 2 tbsp Dill, chopped
  • 2 tbsp Olive Oil
  • Salt, to taste
  • Pepper, to taste
  • 4 cups Mixed Greens or Lettuce
  • 1 cup Tomatoes, chopped
  • 1/2 Red Onion, sliced

Instructions

  1. Cook the chicken breast until done, allow to cool.
  2. In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, olive oil, salt, and pepper; mix until smooth.
  3. Chop the cooled chicken into cubes. In a large bowl, add mixed greens, chopped tomatoes, and sliced red onion.
  4. Toss in the chopped chicken and drizzle the tzatziki sauce over the salad, mixing gently to coat.
  5. Serve chilled or at room temperature.

Notes

For a vegetarian option, substitute chicken with grilled tofu or chickpeas. Let the tzatziki sauce sit in the fridge for at least 30 minutes for better flavor.
