  • 1 cup frozen corn
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 tablespoons taco seasoning (store-bought or homemade)
  • 1 cup shredded cheddar or Mexican blend cheese
  • Salt and pepper to taste
  • Optional toppings: sour cream, avocado, cilantro, lime wedges

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook for 6–8 minutes, breaking it up until browned. Drain excess fat.
  2. Add onion, garlic, and bell pepper. Cook for 3–4 minutes until softened and fragrant.
  3. Stir in taco seasoning, salt, and pepper, mixing well to coat all the ingredients.
  4. Add black beans, corn, and diced tomatoes. Stir and let simmer for 5 minutes until thickened.

Notes
