Description

A flavorful blend of grilled chicken, fresh veggies, and tangy tzatziki sauce, perfect for a healthy meal.

Ingredients

Scale
  • 2 chicken breasts
  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 bell pepper, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup plain yogurt
  • 1 clove garlic, minced
  • Juice of 1 lemon
  • Fresh dill or parsley, chopped

Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, lemon juice, minced garlic, salt, and pepper. Marinate the chicken for at least 30 minutes.
  2. Grill the chicken: Preheat your grill. Cook the chicken for about 6-7 minutes on each side, or until it reaches an internal temperature of 165°F.
  3. Prepare the tzatziki sauce: While the chicken is on the grill, combine yogurt, minced garlic, lemon juice, and chopped dill in a bowl. Mix well to combine.
  4. Slice the chicken: Once grilled, let the chicken rest for a couple of minutes and then slice it into strips.
  5. Assemble the bowls: In serving bowls, layer the cooked quinoa or rice, top with grilled chicken, and add your fresh veggies.
  6. Finish with tzatziki: Drizzle the tzatziki sauce over the bowls and sprinkle with additional herbs, if desired.

Notes

These bowls are great for meal prep; just keep the tzatziki sauce separate until ready to serve. You can customize the veggies based on your preferences.
