Description
A comforting and hearty German Potato Soup made with simple ingredients, perfect for chilly days.
Ingredients
Scale
- 4 large potatoes, peeled and diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 4 cups vegetable broth
- 1 cup dairy-free cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (such as parsley or chives) for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery, and sauté until softened (about 5-7 minutes).
- After the vegetables have softened, add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer until the potatoes are tender (about 20 minutes).
- For a creamier texture, mash some of the potatoes in the pot.
- Stir in the dairy-free cream and season the soup with salt and pepper to taste.
- Serve the soup hot, garnished with fresh herbs for an extra touch of flavor.
Notes
Choose starchy potatoes like Russets for the best texture. You can customize the soup by adding cooked sausage or other vegetables.
