Quick and flavorful Garlic Butter Steak Bites are perfect for a weeknight dinner. Tender steak and zucchini tossed in a dreamy garlic butter sauce.

- 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
- 1 medium zucchini, cut into half-moons
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Pat the steak bites dry with paper towels, then season them generously with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Carefully add the steak bites in a single layer. Sear them for 1-2 minutes per side until they are nicely browned. Once done, remove from the skillet and set aside.
- Add the butter to the same skillet. When it melts, toss in the minced garlic and let it cook for about 30 seconds until fragrant.
- Next, add the zucchini and cook for 3-5 minutes, stirring occasionally until they’re tender-crisp.
- Return the cooked steak bites to the skillet and gently toss everything together to coat it in the garlic butter.
- Cook for an additional 1-2 minutes until the steak is heated through.
- If you like, garnish with freshly chopped parsley and serve immediately.
Notes
Searing the steak properly and using even cuts of zucchini will enhance the flavor and texture. For a spicy kick, consider adding red pepper flakes!
