Description

Quick and flavorful Garlic Butter Steak Bites are perfect for a weeknight dinner. Tender steak and zucchini tossed in a dreamy garlic butter sauce.


Ingredients

  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Pat the steak bites dry with paper towels, then season them generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Carefully add the steak bites in a single layer. Sear them for 1-2 minutes per side until they are nicely browned. Once done, remove from the skillet and set aside.
  4. Add the butter to the same skillet. When it melts, toss in the minced garlic and let it cook for about 30 seconds until fragrant.
  5. Next, add the zucchini and cook for 3-5 minutes, stirring occasionally until they’re tender-crisp.
  6. Return the cooked steak bites to the skillet and gently toss everything together to coat it in the garlic butter.
  7. Cook for an additional 1-2 minutes until the steak is heated through.
  8. If you like, garnish with freshly chopped parsley and serve immediately.

Notes

Searing the steak properly and using even cuts of zucchini will enhance the flavor and texture. For a spicy kick, consider adding red pepper flakes!
