Description

A comforting and easy-to-make garlic butter chicken recipe that simmers in the crockpot for tender, juicy results.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1/2 cup chicken broth

Instructions

  1. Toss the chicken, potatoes, and carrots into the slow cooker.
  2. In a bowl, combine melted butter, minced garlic, Italian seasoning, salt, pepper, and chicken broth.
  3. Gently pour the garlic butter mixture over the chicken and veggies. Give everything a light stir.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  5. If desired, garnish with fresh parsley before serving.

Notes

For extra flavor, consider browning the chicken before adding it to the slow cooker. If you prefer a thicker sauce, mix cornstarch with water and add it in the last 30 minutes of cooking.
