- 2 lbs boneless, skinless chicken breasts or thighs
- 1.5 lbs baby red potatoes, quartered
- 1 lb whole carrots, peeled and cut into chunks
- 6 cloves garlic, minced
- 1/2 cup (1 stick) unsalted butter, melted
- 1 tbsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp chopped parsley (optional, for garnish)
- 1/2 cup chicken broth
Instructions
- Toss the chicken, potatoes, and carrots into the slow cooker.
- In a bowl, combine melted butter, minced garlic, Italian seasoning, salt, pepper, and chicken broth.
- Gently pour the garlic butter mixture over the chicken and veggies. Give everything a light stir.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- If desired, garnish with fresh parsley before serving.
Notes
For extra flavor, consider browning the chicken before adding it to the slow cooker. If you prefer a thicker sauce, mix cornstarch with water and add it in the last 30 minutes of cooking.
