Description

Comforting dish with tender beef bites in garlic butter sauce, paired with buttery baby potatoes.

Ingredients

Scale
  • 1.5 lbs beef bites (cubed)
  • 1.5 lbs baby potatoes (halved)
  • 1/2 cup unsalted butter
  • 4 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley (chopped, for garnish)

Instructions

  1. Place the cubed beef bites and halved baby potatoes in your slow cooker.
  2. In a small saucepan over low heat, melt the unsalted butter.
  3. Add the minced garlic, salt, pepper, thyme, and paprika to the melted butter and stir until blended.
  4. Pour the garlic butter mixture over the beef and potatoes in the slow cooker.
  5. Cover and let it cook on low for 6-8 hours or on high for 4 hours, until the beef is tender and the potatoes are cooked.
  6. Once cooked, garnish with fresh parsley and enjoy your meal!

Notes

For richer flavor, consider searing the beef bites before slow cooking. You can also experiment with different herbs.
