Description

Tender, juicy steak bites marinated in garlic, soy sauce, and balsamic vinegar, seared to perfection and served with roasted veggies.


Ingredients

  • 2 lb lean steak, trimmed and cubed into 1-inch pieces
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp balsamic vinegar
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder
  • ¼ tsp crushed red pepper (optional)
  • 3 cloves garlic, minced
  • 2 tbsp balsamic vinegar
  • 2 tbsp low-sodium beef broth
  • 1 tsp honey
  • 1 tbsp soy sauce
  • 1.5 lb baby gold potatoes, quartered
  • ½ tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder
  • 1 tsp paprika
  • 12 oz fresh green beans, trimmed
  • ½ tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder

Instructions

  1. Marinate the steak: In a large bowl, combine the cubed steak, olive oil, soy sauce, balsamic vinegar, salt, pepper, garlic powder, and crushed red pepper. Let it marinate for at least 15 minutes.
  2. Preheat your oven to 425°F (220°C). On a baking sheet, toss the quartered baby gold potatoes with olive oil, salt, pepper, garlic powder, and paprika. Roast for about 20 minutes, stirring halfway through.
  3. Sear the steak bites: In a large skillet over medium-high heat, add the marinated steak bites in a single layer. Sear them for about 2-3 minutes per side until browned and cooked to your desired doneness.
  4. Make the glaze: In the same skillet, add minced garlic, balsamic vinegar, beef broth, honey, and soy sauce. Stir and let simmer for a few minutes until slightly thickened.
  5. Assemble bowls: Once the potatoes are crispy and the steak is seared, plate both along with the fresh, sautéed green beans that you’ve tossed in olive oil, salt, and pepper.

Notes

Feel free to adjust ingredients based on personal taste. For a vegetarian option, swap steak for portobello mushrooms or tofu.
