- 1/2 cup Kalamata olives, pitted

- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar

Instructions
- Combine the chopped romaine lettuce, halved cherry tomatoes, diced cucumber, thinly sliced red onion, chopped bell pepper, and pitted Kalamata olives in a large bowl.
- Add in the diced chicken breast and crumbled feta cheese.
- In a smaller bowl, whisk together the olive oil, red wine vinegar, dried oregano, a pinch of salt, and pepper to create your dressing.
- Drizzle the dressing over the salad and toss gently to combine all ingredients well.
- Serve immediately or refrigerate for about 30 minutes to let the flavors meld together.
Notes
For a vegetarian twist, substitute chicken with chickpeas. You can also use goat cheese instead of feta.
