Ingredients

  • 2 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 bell pepper, chopped
  • 1/2 cup Kalamata olives, pitted
  • 1 cup cooked chicken breast, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Combine the chopped romaine lettuce, halved cherry tomatoes, diced cucumber, thinly sliced red onion, chopped bell pepper, and pitted Kalamata olives in a large bowl.
  2. Add in the diced chicken breast and crumbled feta cheese.
  3. In a smaller bowl, whisk together the olive oil, red wine vinegar, dried oregano, a pinch of salt, and pepper to create your dressing.
  4. Drizzle the dressing over the salad and toss gently to combine all ingredients well.
  5. Serve immediately or refrigerate for about 30 minutes to let the flavors meld together.

Notes

For a vegetarian twist, substitute chicken with chickpeas. You can also use goat cheese instead of feta.
