- 1 cup low-fat cottage cheese
- 2 large eggs
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
- In a large mixing bowl, whisk together the cottage cheese, eggs, and salt until smooth.
- In a separate bowl, combine the flour and baking powder, mixing well.
- Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
- Pour the batter into the prepared loaf pan and smooth out the top.
- Bake for 45-50 minutes or until golden brown, and a toothpick inserted into the center comes out clean.
Notes
Serve warm with butter or jam. To store, keep in an airtight container or wrap and refrigerate for up to a week.
