Description

A light and fluffy bread made with low-fat cottage cheese, perfect for breakfast or a snack.


Ingredients

  • 1 cup low-fat cottage cheese
  • 2 large eggs
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  2. In a large mixing bowl, whisk together the cottage cheese, eggs, and salt until smooth.
  3. In a separate bowl, combine the flour and baking powder, mixing well.
  4. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
  5. Pour the batter into the prepared loaf pan and smooth out the top.
  6. Bake for 45-50 minutes or until golden brown, and a toothpick inserted into the center comes out clean.
