Description

Quick and easy cottage cheese flatbreads that are soft, slightly tangy, and perfect for busy weeknights.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 2 tablespoons olive oil
  • Water as needed

Instructions

  1. Combine cottage cheese, flour, baking powder, and salt in a large mixing bowl.
  2. Add the egg and olive oil.
  3. Mix until a soft dough forms, adding water if needed.
  4. Divide the dough into 6–8 equal pieces and roll each into thin rounds.
  5. Heat a skillet over medium heat and cook each flatbread for 2–3 minutes per side until golden.
  6. Stack cooked flatbreads on a plate and cover to keep warm.

Notes

For best results, let cooked flatbreads cool before storing. Can be frozen for up to 2 months.
