Ingredients

  • 1/2 cup cottage cheese
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch (optional)

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the eggs. In a clean mixing bowl, beat the egg whites with cream of tartar until stiff peaks form.
  3. In another bowl, whisk together the egg yolks, cottage cheese, salt, and optional cornstarch until smooth.
  4. Gently fold the whipped egg whites into the cottage cheese mixture in three parts, preserving the airiness.
  5. Spoon the mixture into 6 mounds on the lined baking sheet, about 1/2 inch thick.
  6. Bake for 25–30 minutes until golden brown and firm. Let cool on a wire rack before serving.
