Description

Hearty and sophisticated chicken breasts stuffed with earthy mushrooms, vibrant spinach, and creamy cheese, perfect for busy weeknights or special occasions.


Ingredients

  • 4 chicken breasts
  • 8 oz mushrooms, chopped
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat a splash of olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  3. Introduce the chopped mushrooms to the skillet and sauté until softened. Then, toss in the spinach and cook until wilted.
  4. Remove the skillet from heat and mix in cream cheese, grated Parmesan, thyme, salt, and pepper until combined.
  5. Carefully cut a pocket into each chicken breast and fill them with the mushroom mixture.
  6. Add a bit more olive oil to the skillet and sear each stuffed chicken breast on medium-high until beautifully browned.
  7. Transfer the chicken to a baking dish and bake for 25-30 minutes, or until fully cooked.
  8. Let the chicken rest for a few minutes before slicing and serving.

Notes

Consider using low-fat cream cheese or experimenting with different fillings like sun-dried tomatoes or feta. Serve on creamy mashed potatoes or with a light salad.
