- 4 chicken breasts
- 8 oz mushrooms, chopped
- 1 cup spinach, chopped
- 1/2 cup cream cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp dried thyme
- Salt and pepper, to taste
- Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat a splash of olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Introduce the chopped mushrooms to the skillet and sauté until softened. Then, toss in the spinach and cook until wilted.
- Remove the skillet from heat and mix in cream cheese, grated Parmesan, thyme, salt, and pepper until combined.
- Carefully cut a pocket into each chicken breast and fill them with the mushroom mixture.
- Add a bit more olive oil to the skillet and sear each stuffed chicken breast on medium-high until beautifully browned.
- Transfer the chicken to a baking dish and bake for 25-30 minutes, or until fully cooked.
- Let the chicken rest for a few minutes before slicing and serving.
Notes
Consider using low-fat cream cheese or experimenting with different fillings like sun-dried tomatoes or feta. Serve on creamy mashed potatoes or with a light salad.
