Description

Ingredients

  • 1 can white beans (cannellini or navy beans), drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Toss in the diced onion and minced garlic. Sauté until the onion is translucent and fragrant—about 3-5 minutes.
  3. Stir in the white beans, vegetable broth, thyme, and rosemary. Let it come to a boil.
  4. Once boiling, reduce the heat and allow it to simmer for 20-25 minutes.
  5. Blend the soup using an immersion blender or a stand blender until you reach your desired consistency.
  6. Season generously with salt and pepper to taste.
  7. Garnish with fresh parsley before serving.
