Description

Creamy and sweet casserole topped with golden mini marshmallows, perfect for any meal or holiday gathering.


Ingredients

  • 3 cups mashed sweet potatoes
  • 1/2 cup brown sugar
  • 1/3 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup melted butter
  • 2 cups mini marshmallows
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed sweet potatoes, brown sugar, milk, eggs, vanilla extract, melted butter, cinnamon, and salt. Mix until smooth and well combined.
  3. Pour the sweet potato blend into a greased baking dish, spreading it evenly.
  4. Bake in the oven for 25 minutes.
  5. Remove from the oven and sprinkle mini marshmallows generously on top.
  6. Return to the oven and bake for an additional 10 minutes or until the marshmallows are golden brown.
  7. Serve warm and enjoy!

Notes

Use freshly mashed sweet potatoes for the best flavor. To store leftovers, let them cool completely and transfer to an airtight container. Reheat in the microwave or oven.
