- 2 cups Baby Spinach (Finely chopped; kale can be substituted)
- 1 cup Shredded Mozzarella Cheese (Feta for a tangier flavor)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the cottage cheese, olive oil, and egg until smooth.
- In another bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the cottage cheese mixture, stirring well to combine.
- Fold in the chopped spinach and shredded mozzarella cheese until evenly distributed.
- Use your hands to shape the mixture into bagel-like rounds and place them on the prepared baking sheet.
- Bake for about 20-25 minutes, or until golden brown on the outside and cooked through.
- Let them cool slightly before serving.
